We get asked this a lot. Should you sweeten your tea? The truth is that you should do whatever makes you love your tea the most, there is no right or wrong way. But here is the rule of thumb we use:
If it’s nekkid (just a tea, no fruit, flowers, or extracts) don’t sweeten. Enjoy the leaves as they are, and see if you can pick out the various notes, do you taste chocolate? Florals? Astringency?
If it’s fruity or floral, sweeten lightly. Usually a teaspoon per 8 oz cup is a good rule, this is about 1/4 cup in a gallon.
If it’s spicy, like chai, sweeten more. 2 tsp per cup is a great starting place. A heaping half cup to a gallon is just about right.
Iced tea may need more because the cold cuts the sweet flavor, but try first.
Which sweeteners? Anything that you love. We usually go with organic vegan cane sugar, but use what you love. If you like agave, honey, stevia… go for it. We use sugar so we taste the tea, because agave and the like bring their own flavors to the tea.

I don’t normally sweeten my tea too much. But, like you said, it depends on what kind of tea it is, and it is up to the individual tea drinker.
